At
the end of the 70s, we began our stage in the restaurant world
with a little guest house which belonged to my parents. There,
my wife, guided by my mother (a great cook) prepared popular
menus. We have devoted to this for five years and we decided
to open our own restaurant Casa Cantó in 1983, where
we began to retrieve our local gastronomy which is easy to
prepare but rich in raw materials because we always try to
obtain the best fishes and shellfishes from the markets of
Denia and Calpe, and we have been working with some locals
fishermen for several years. There are some local farmers
who supply us their best vegetables and fruits. We try to
obtain our products as directly as possible, from the fisherman
or the farmer to us.
Luisa and I have been working in our restaurant for 20 years
and now we have included our children Jordi and Ximet, who
have added their youth and training (they have studies of
Gastronomy) together with an atmosphere of constant training
which makes you want to do extremely well.
Our kitchen deserves an special mention too because we have
designed it with the help of Pedro Cabrera, Suministros Hosteleros
Benissa manager.
The cooker Charvet has 18 burners specially prepared to our
well-known “paellitas”. My wife Luisa is in charge
of it together with María José (with more than
12 years of experience), Mari Conchi (with more than ten),
Ratja and Pere.
My sons and I are at the dinning-room together with Inma,
George, Kelly and with Chus at the Reception we try to make
you feel welcome.
In conclusion, our philosophy is familial and we try to give
an special attention to our clients and friend at home, which
has a big Lounge, from where you can see the “Tinença
del Cantó”, our big wine cellar and enjoy of
beautiful sightseeing. And there are too three Private Rooms
for Business or familiar meals…
And as one of the most important gastronomy critics from Alicante
said:
" … Ximo Ivars tells us that he is sure that their
speciality are home-made dishes. And nobody can refuse to
an Arròs Ximo, an Arròs de Senyoret, a Putxero
de Polp or a Cruet de Peix (Casa Cantó’s specialities)
Casa Cantó is a restaurant (the quality always ready
to break out) with the particularity of offering an individual
rice not mattering how many people have sat down to eat"
